September is my birthday month! So it’s also the month I add rainbow sprinkles to, well.. everything. And this 5 ingredient birthday cake banana bread is no exception. But also, who knew adding sprinkles to banana bread would make for the most delicious and fun addition ever?! Not sure if I’ll ever not add sprinkles to my banana bread from now on. It’s really THAT good!

This birthday cake banana bread is just one of the recipes I’ll be baking for myself this month. I’ve already made my healthy gluten-free mug cakes a few times – because why not?? they’re SO easy. And as part of a larger celebration I’ll be baking up this gluten-free and dairy-free carrot cake because it’s simply my all-time FAVE. It’s shaping up to be a delicious month, friends! Happy birthday to me. 🙂

What You’ll Need to Make This Recipe

  • Bananas: Overripe bananas provide the natural sweetness and moisture for this recipe. The more ripe the bananas, the sweeter your banana bread will be, making them the key ingredient.
  • Eggs: Eggs act as a binder in this recipe, helping the banana bread rise and stay moist. They also contribute to the fluffy texture.
  • Vanilla Extract (Optional): Adding vanilla enhances the sweet, cake-like flavor, but it’s optional if you prefer a more banana-forward taste.

  • Self-Rising Flour: If you don’t have self-rising flour, use all-purpose flour with baking powder. This gives the bread structure and helps it rise properly. To make this recipe gluten-free like I did, use a gluten free self-rising flour, I recommend this one.
  • Rainbow Sprinkles: The fun part! Sprinkles give this banana bread a celebratory birthday cake vibe. Be sure to use rainbow sprinkles that hold up well during baking. I use and love these dye-free rainbow sprinkles from Amazon.

How to Make 5 Ingredient Birthday Cake Banana Bread

  1. Preheat and Prep: Start by preheating your oven to 350°F and greasing or lining a loaf pan. This ensures the bread doesn’t stick and bakes evenly.
  2. Mash the Bananas: In a large bowl, mash your overripe bananas until smooth. This will be the base for your bread, adding natural sweetness and moisture.
  3. Mix the Wet Ingredients: Add the eggs and vanilla extract (if using), and whisk everything together until fully combined.
  4. Combine Dry Ingredients: Add the brown sugar, flour, and rainbow sprinkles to the banana mixture, stirring until no flour pockets remain.
  5. Bake: Pour the batter into your prepared loaf pan and bake for 55-60 minutes. The loaf should be golden brown, and a toothpick inserted into the center should come out clean.
  6. Cool and Glaze: While the bread cools, mix powdered sugar and milk to make the glaze, then drizzle it over the cooled bread for extra sweetness.

How Can I Store the Leftovers?

This banana bread keeps well for 3-4 days at room temperature when covered tightly with plastic wrap or stored in an airtight container. If you want it to last longer, you can refrigerate it for up to a week, or freeze individual slices for up to 3 months!

Ingredients

  • 3 large and overripe bananas
  • 2 eggs
  • 2 teaspoons vanilla extract optional, but recommended
  • 1/2 cup brown sugar or coconut sugar
  • 1 1/2 cups self rising flour (I used gluten-free self-rising flour) or 1 1/2 cups all purpose flour PLUS 1 teaspoon baking powder
  • 1/2 cup rainbow sprinkles

For the optional glaze:

  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  • Preheat oven to 350° Fahrenheit and line a 9×4-inch loaf pan with parchment paper, then lightly coat the inside of the pan with oil.
  • Place the bananas in a large bowl and mash well with a fork, until mostly smooth.

  • Add the eggs and vanilla extract (if using) to the bowl the and whisk to combine. Then, add the brown sugar, flour, and sprinkles then mix again until fully combined and no pockets of flour remain.

  • Pour the batter into your prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted down the center of the bread comes out clean.
  • Remove the birthday cake banana bread from the oven and let it cool while you make the glaze.
  • Add the powdered sugar and milk to a small bowl, then whisk together until smooth. Pour glaze over the cooled banana bread.

We LOVE a healthy sweet treat around here, and this gluten free mug cake fits right in! If you know me, you know I’m a total dessert person. I eat dessert quite literally every single night. Lately, my go-to simple dessert recipes have been my healthy gluten free cookie dough, or if I have a few extra minutes I’ll bake these one-bowl gluten free almond flour chocolate chip cookies (SO GOOD!). But now, I’m super excited to add this 6-ingredient gluten free mug cake to the rotation!

This recipe is gluten-free, paleo, and dairy-free! But still perfectly sweet and totally indulgent. It’s also one of those recipes you can customize however you’d like. I love adding a small handful of chocolate chips to mine for a chocolate chip mug cake. Or, when I’m feeling festive, I’ll mix in a tablespoon of rainbow sprinkles! However you serve it, I guarantee you’ll love it.

What You’ll Need To Make A Healthy Gluten Free Mug Cake

Almond Flour: Almond flour serves as the base for this mug cake, providing a nutty flavor and tender texture. It’s also a great gluten-free alternative to traditional flour. I buy my almond flour in bulk, so I always have some on-hand for this recipe!

Maple Syrup: Sweeten your mug cake naturally with maple syrup, adding a touch of sweetness without refined sugars.

Egg: A large egg helps bind the ingredients together and provides structure and extra fluffiness to the mug cake.

Coconut Oil: Melted coconut oil adds moisture to the cake, resulting in a soft and fluffy texture. Feel free to use any oil or melted butter of your choice if coconut oil isn’t available.

Vanilla Extract: Enhance the flavor of your mug cake with a splash of vanilla extract, adding depth and richness!

Tips and Tricks

  • After microwaving, resist the temptation to dive right into your mug cake. Let it cool for a few minutes to avoid burning your mouth! Trust me, learn from my mistakes.

How To Bake It In The Oven Instead

  1. Preheat the oven to 350° Fahrenheit.
  2. Whisk together all ingredients in an oven-safe mug or ramekin.
  3. Bake for 15 minutes, or until a toothpick inserted down the center of the mug cake comes out clean.
  4. Let it cool for a few minutes, then enjoy!

Make This Gluten-Free Mug Cake Vegan (No Egg)

For a vegan version of this recipe, simply replace the egg with 2 tablespoons of apple sauce or 2 tablespoons of non-dairy milk. The cake won’t rise quite as much, but it’ll taste just as delicious!

Carrot cake is my all-time FAVORITE kind of cake! And a few weeks ago I realized – I’ve made healthy carrot cake cookies, gluten-free carrot cake muffins, and even carrot cake baked oats but I’ve never made an actual carrot CAKE before. I know, I was shocked too. So I found the time and started recipe testing!

I knew my carrot cake had to be a few things – gluten-free, dairy-free, and ideally refined sugar-free. I also really wanted to keep this cake recipe as healthy as possible, so I stuck to almond flour as the base, and coconut sugar and maple syrup to sweeten it. But don’t worry, I wasn’t willing to compromise on taste or texture, so after a few (failed) tests I finally did it! The BEST EVER gluten-free and dairy-free carrot cake, naturally sweetened and oh-SO delicious.

This gluten-free and dairy-free carrot cake is simply heavenly – and made in just one bowl! It’s bursting with warm spices, shredded carrots, and topped with a luscious cinnamon cream cheese frosting. This cake is an incredible treat for any occasion!

Ingredients

  • 4 large eggs, at room temperature

  • 1/2 cup brown sugar, or coconut sugar

  • 1/3 cup maple syrup

  • 1/4 melted coconut oil

  • 1 teaspoon vanilla extract

  • 1 1/2 cups almond flour

  • 1 1/2 teaspoons cinnamon

  • 1 teaspoon baking powder

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon salt

  • 1 1/2 cups shredded carrots, wrapped and dried in a paper towel to release as much moisture from the carrots as possible

  • 3/4 cups walnuts, roughly chopped

  • 1/2 cup raisins

  • For the cinnamon cream cheese frosting:
  • 1/2 cup cream cheese, softened (I used non-dairy cream cheese)

  • 1/2 cup butter, softened (I used non-dairy butter)

  • 4 cups powdered sugar

  • 3-4 tablespoons milk (I used non-dairy milk)

  • 2 teaspoons cinnamon

  • 1/4 teaspoon vanilla extract

Directions

  • Preheat oven to 350° Fahrenheit and line two 6-inch round cake pans with parchment paper. Then, coat pans with a light layer of oil to prevent sticking.
  • In a large bowl, beat together the eggs and coconut sugar or brown sugar with either a hand or stand mixer on high speed until pale and thick, about 5 minutes.gluten-free-carrot-cake-step-1
  • Add in the maple syrup, melted coconut oil, and vanilla extract. Beat for a few seconds to combine.
  • Add in the almond flour, cinnamon, baking powder, nutmeg, and salt. Beat for one minute, or until the batter is fully combined. Then, add in the shredded carrots, chopped walnuts, and raisins, and use a spatula to fold those ingredients into the batter.gluten-free-carrot-cake-step-02
  • Transfer and divide the batter between the two prepared cake pans and bake 20-25 minutes, or until a toothpick inserted down the center of each cake comes out mostly clean.
  • Carefully remove the cakes from the pan by sliding a sharp knife around the outside edge of the cake, then flipping the pans over onto a wire cooling rack. Let the cakes cool completely on the wire rack before frosting.gluten-free-carrot-cake-step-03
  • Once cakes are cool, make the cream cheese frosting by adding all frosting ingredients to a large bowl and beating with either a hand or stand mixer until fully combined.   • Place one of the cooled cakes on a cake stand or serving plate, then spread 1/3 of the frosting on top. Then, place the other cooled caked on top of the frosting layer and cover both stacked cakes with remaining frosting.

Can You Use Almond Flour For Cakes?

Yes, absolutely! Almond flour adds texture and flavor, and is loved by those following a paleo diet. Almond flour can be beneficial to someone looking to reduce their carbs, grains and sugar intake. Unlike wheat or rice flour blends, almond flour contains no grains so it won’t lead to a spike blood sugar.

What You’ll Need To Make Almond Flour Cake

You’ll only need a few simple ingredients to make this almond flour cake. The exact measurements are included in the recipe card!

Eggs – Bring your eggs to room temperature before using them in this recipe. Then, crack them into your bowl and beat them until super light and airy. The goal here is to introduce as much air to the eggs as possible, which will result in a lighter and fluffier cake!

Almond Flour – I recommend the Bob’s Red Mill Super Fine Almond Flour for this grain-free recipe. The more finely ground the almond flour is, the lighter your cake will be. However, if you can’t find an almond flour labeled “super fine,” don’t worry – many are ground finely enough to work in this recipe. Also, avoid using almond meal, it’s heavier and will result in a more dense cake.

Lemon Zest – Let’s call is the secret ingredient! A pinch of lemon zest gives this almond flour cake a hint of tangy, citrus-y freshness. Without out, the cake tastes great, but with it, the cake tastes incredible. So if you’re looking to take this gluten-free dessert recipe up a notch, don’t forget the lemon zest.

Tips and Tricks When Making Almond Flour Cake

  • Beat the eggs for a full 5 minutes, no less! Beating the eggs until pale and thick is hands-down the most important part of this recipe. No matter how tempting it may be, don’t cut this step short!
  • For easy removal, I recommend baking this almond flour cake in a spring-form pan. Once done baking, gently run a butter knife along the inside edge of the pan to unstick it from the sides. Then, release the sides of the spring-form pan and list away the sides revealing your perfect cake!
  • Top this gluten-free cake however you’d like! I finished mine off with a generous dollop of coconut white cream and some fresh berries. This cake would also taste great with your favorite frosting, or a simple sprinkling of powdered sugar!
  • If you like cinnamon, try adding a teaspoon of cinnamon to the batter.

I didn’t always love cheesecake. Most I tried were too dry, dense, and/or sweet. Therefore, in developing this cheesecake I made sure it was light, almost fluffy, and perfectly sweet! And it wouldn’t be a SDHB recipe if I didn’t make it healthier too. I took the best cheesecake recipes I could find, substituted a few simple ingredients, and voilà this better-for-you cheesecake recipe was born!

Ingredients such as vegan cream cheese, vegan yogurt, and a touch of maple syrup make for a more nutritient dense recipe. I wish I had recorded the look on my boyfriend’s face when I told him this cheesecake was SO healthy he could, in fact, eat it for breakfast! Once he processed the near too-good-to-be-true news, he excitedly inhaled a massive slice of this vegan and gluten-free treat.

What You Need To Make Healthy Cheesecake

Gluten-Free Graham Crackers – I used my own recipe for gluten-free graham crackers, though you can use your favorite store bought gluten-free graham crackers instead. To turn them into graham cracker crumbs you can either seal them in a ziploc bag and crush them with a rolling pin or heavy object, or add them to a food processor and give them a few pulses. Once all crackers have been ground into crumbs and no large pieces remain, you’re ready to use them in this recipe!

Vegan Cream Cheese – I used and love the Kite Hill Plain Vegan Cream Cheese in this recipe! Though feel free to use your favorite vegan cream cheese instead. If not vegan, you can use regular cream cheese. However, be sure to avoid flavored cream cheeses, plain is necessary for this healthy cheesecake recipe.

Vegan Yogurt – Similar to the vegan cream cheese, make sure your vegan yogurt is plain and unsweetened. Any added flavors or sugar would completely throw off the balance of this recipe. I used plain coconut yogurt and had great results, though any non-dairy plain unsweetened yogurt will work!

Corn Starch – Most cheesecakes contain eggs to help bind the filling once baked. However, this cheesecake recipe is both healthy and vegan with the use of corn starch instead. Corn starch is imperative in getting this cheesecake to firm up and set to its perfectly light and soft consistency. If you don’t have corn starch, you can use arrowroot starch instead.

Adjust This Recipe To Your Diet

  • Add Dairy: Use regular butter, cream cheese, and yogurt in this recipe if not vegan or dairy-free.
  • Make it Paleo: Use paleo graham crackers, coconut oil instead of vegan butter, and arrowroot starch instead of cornstarch to turn this into a healthy paleo cheesecake recipe!

  • For the graham cracker crust:
  • 1 1/2 cups gluten-free graham cracker crumbs, see Notes

  • 5 tablespoons vegan butter, melted

  • 1 tablespoon coconut oil

  • For the cheesecake filling:
  • 16 ounces plain vegan cream cheese

  • 2 cups plain unsweetened vegan yogurt

  • 2 teaspoons vanilla extract

  • 1 tablespoon lemon juice

  • 1/2 cup maple syrup

  • 3 tablespoons corn starch, see Notes

  • Pinch of salt

Directions

  • Preheat oven to 350° Fahrenheit and line a 9-inch springform pan with parchment paper.
  • Add all graham cracker crust ingredients to a large bowl and mix together.
  • Transfer crust to the springform pan, flatten into an even layer across the bottom, then bake for 7-8 minutes or until slightly golden brown.
  • Beat all cheesecake filling ingredients together in a large bowl then transfer to the pan and smooth over the crust.
  • Fill a pan with 1-inch of water and transfer it to the oven on the lower rack.
  • Place the cheesecake on the upper rack, above the water and bake for 30-35 minutes. Crack the oven door and allow cheesecake to cool in the oven for 1 hour.
  • Remove from the oven and chill in the fridge for at least 8 hours before slicing and eating.
