We’ve been on a big banana bread kick in my house. But the problem was… every time I make a new loaf, it’s gone in a couple days! So I needed a quick, easy, and SIMPLE recipe to get in our banana bread fix without spending too much time in the kitchen. *enter 4 ingredient banana bread.*

And if you’ve been around here a while, you know I’m all about the easy sweet treats! This time last year I went through a huge 3-ingredient oreo mug cake phase (major pregancy craving!) and over the summer, I couldn’t stop making my healthy no-bake cookie dough bars. There’s just something about having a healthier sweet treat on-hand that leads to happier days and a happier life.

Something else I always have on-hand? Bananas. I pretty much buy a bunch of bananas every week because, again, we just love them in this house. However, we often find ourselves with a few overly ripe bananas by the end of the week. But thanks to this 4 ingredient banana bread recipe, I always have a way to put them to good use!

I made my banana bread gluten-free, but you totally don’t have to! This recipe is also naturally dairy-free which I LOVE. And I should mention, it’s easily made refined sugar-free as well. What You’ll Need to Make 4 Ingredient Banana Bread

Bananas: The star of the show! These bananas bring natural sweetness and moisture to the bread. The riper, the better – those speckles on the peel are a sign of maximum flavor.

Eggs: Eggs play a crucial role in binding the ingredients together, providing structure to the bread. They contribute to the moist and tender texture we all love.

Brown Sugar: Brown sugar adds a rich caramel flavor and sweetness to the banana bread. It complements the bananas perfectly, creating a delightful depth of taste.

Self-Rising Flour: The key to keeping it simple! Self-rising flour contains baking powder and salt, eliminating the need for additional leavening agents. It ensures your banana bread rises beautifully. But if you don’t have self-rising flour, feel free to use regular flour instead, then adding 1 teaspoon of baking soda to the recipe!

Tips and Tricks

  • The riper your bananas, the sweeter and more flavorful your banana bread will be. Don’t shy away from those brown speckles!
  • Mix the ingredients until just combined. Overmixing can affect the texture, so keep it simple and stir until everything is blended.
  • Allow your banana bread to cool slightly in the pan before transferring it to a wire rack. This patience ensures a neater slice and preserves the bread’s texture.

Adjust This Recipe to Your Dietary Needs

Make it Gluten-Free: Swap out the self-rising flour for a gluten-free alternative to make this banana bread gluten-free. I used Beth Blends Grain-Free Flour Blend in my 4 ingredient banana bread and it worked great!

Make it Refined Sugar-Free: Opt for coconut sugar as a substitute for brown sugar for a refined sugar-free option.

Baking doesn’t have to be complicated, and this 4 ingredient banana bread proves just that! With one bowl and a handful of simple ingredients, you can whip up a loaf of incredibly moist and delicious banana bread. Best enjoyed as a breakfast, snack, or dessert!

Ingredients

  • 3 large and overripe bananas

  • 2 eggs

  • 1/2 cup brown sugar

  • 1 1/2 cups self-rising flour

Directions

  • Preheat oven to 350° Fahrenheit and grease or line a 9×4-inch loaf pan.
  • Place the bananas in a large bowl and mash well with a fork, until mostly smooth.
  • Add the eggs to the bowl and whisk to combine. Then, dd the brown sugar and flour, then mix again until fully combined and no pockets of flour remain.
  • Pour the batter into your prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted down the center of the bread comes out clean.
  • Remove the banana bread from the oven, then let it cool completely before slicing.

What You’ll Need To Make Vegan Biscuits

Non-Dairy Milk – Any non-dairy milk will work in this plant-based bread recipe! I used almond milk, but you can definitely use soy, hemp, cashew, or even coconut milk if you’d like.

Apple Cider Vinegar – Ever notice that tiny bit of tanginess found in most biscuits? Well, that’s the buttermilk speaking. And since we obviously can’t use regular ole’ buttermilk in these vegan biscuits, we make our own vegan version instead. By mixing apple cider vinegar into cold non-dairy milk, then leaving it to sit for a few minutes, we make vegan buttermilk – yup, it’s that easy!

All Purpose Flour – We wouldn’t have biscuits without flour. Specifically, all purpose flour, which bakes up the best biscuits. I’ve pretty much grown up on the King Arthur Organic Unbleached All Purpose Flour. It’s been a staple in my kitchen for years and has seriously never ever failed me. However, you can definitely replace the all purpose flour for gluten-free 1:1 baking flour if you’d like.

Vegan Butter – I use and love the Earth Balance Vegan Buttery Sticks for all my vegan baking needs. Unlike most baking recipes which call for softened butter, we actually want super cold butter for these biscuits. Therefore, leave your vegan butter in the fridge until the second you need to use it. You can even pop it in the freezer for a couple minutes to get it extra cold!

Tips and Tricks

  • Don’t overmix the dough! An overmixed dough will bake up tough and chewy, instead of soft and flaky. So once all ingredients are incorporated, stop mixing and move on to shaping.
  • No biscuit cutter? No problem! I used a metal cocktail shaker in place of a biscuit cutter for this bakery-style recipe. Really any round object will work to cut biscuits.
  • If not a maple butter fan, top these vegan biscuits with any spread you’d like. Some homemade jam, vegan butter, and/or vegan cream cheese would all taste just as delicious!

Adjust This Recipe To Your Dietary Needs

Make it Gluten-Free: For gluten-free vegan biscuits, replace the all purpose flour with 1:1 gluten-free baking flour. I swear by the Bob’s Red Mill Gluten-Free Baking Flour for all my gluten-free baking needs!

Make it Nut-Free: To ensure these biscuits are completely nut-free, use a nut-free non-dairy milk such as soy or oat milk, and a non-dairy butter without any nuts in it.

Ingredients

  • 1/2 cup non-dairy milk

  • 1 tablespoon apple cider vinegar

  • 2 cups all purpose flour

  • 1 tablespoon baking powder

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 1/2 cup vegan butter, very cold

  • For the maple butter:
  • 1/4 cup vegan butter, softened

  • 1 tablespoon maple syrup

Directions

  • Preheat oven to 425° Fahrenheit.
  • Whisk together the non-dairy milk and apple cider vinegar in a small bowl, set aside.
  • In a large bowl, mix together the all purpose flour, baking powder, sugar, and salt.
  • Add butter into flour mixture and use either a pastry cutter or fork to “cut” butter into flour until crumbly. (The mixture should resemble coarse sand)
  • Make a well in the center of the flour and slowly pour in the milk and vinegar. Gently stir until a sticky dough forms.
  • Transfer biscuit dough to a floured surface and roll into a 1-inch thick disc. Use a biscuit cutter or something similar to cut biscuits out of dough.
  • Place biscuits on a baking sheet then bake for 12-15 minutes or until slightly golden.
  • White the biscuits bake, make the maple butter by whisking both ingredients together in a small bowl until combined. Spread maple butter over warm vegan biscuits.

MAIN INGREDIENTS NEEDED TO MAKE THESE Gluten-Free Soft Pretzels

  • All-Purpose Flour – (I’ve used Bob’s Red Mill All-purpose gluten-free flour with great success!)

  • Active Dry Yeast

  • Brown Sugar

  • Salt

  • Xanthan Gum

  • Baking Powder

  • Water

  • Butter (non-dairy)

  • Egg & Egg Yolk

TIPS ON MAKING Gluten-Free Soft Pretzels

Salt is the usual go-to when it comes to pretzel toppings. However, you can use all different kinds of toppings to make it sweeter or more to your liking.

  • For an almond toppinguse Honey Roasted Almonds. Chop roasted almonds into small bits, brush freshly baked pretzels with melted butter, then roll or sprinkle in almonds.

  • For a cinnamon sugar topping, mix 1/2 tsp of cinnamon with 1/4 cup granulated sugar and melt 1 Tbsp of butter in a small bowl. Brush the freshly baked pretzels with melted butter, then roll in cinnamon sugar. 

  • For an extra burst of savory flavors, you can use King Arthur Flour’s Everything Bagel Topping, which is a combination of salt, poppy seeds, sesame seeds, dried onion, and garlic.

Ingredients

  • For the dough:
  • 3 cups all purpose gluten-free flour

  • 2 ¼ teaspoons active dry yeast

  • ¼ cup brown sugar

  • 2 teaspoons salt

  • 1 teaspoon xanthan gum

  • ½ teaspoon baking powder

  • 1 cup warm water

  • ¼ cup non-dairy butter, melted

  • 1 egg, at room temperature

  • For cooking:
  • 10 cups water

  • 2/3 cup baking soda

  • For egg wash:
  • 1 egg yolk

  • 1 tablespoon water

  • For topping:
  • Salt

Directions

  • Mix together the gluten-free flour, yeast, brown sugar, salt, xanthan gum, and baking powder in a large bowl. 
  • Form a well in the center of the flour mixture then pour the warm water, melted butter, and egg into the well. Whisk to combine while slowly incorporating the dry ingredients into the wet ingredients. 
  • Transfer dough to a floured surface and knead until smooth, then shape into a ball and transfer to a lightly greased bowl. Cover bowl with towel, leave to proof in a warm place for an hour or until doubled in size.
  • Preheat oven to 450° Fahrenheit and line a baking sheet with parchment paper.
  • Place dough on a floured surface and separate into 10 equal balls. Warm each ball between the palm of your hands for a few seconds, then roll into an 18-inch rope before shaping each rope into a pretzel. For help shaping, follow this tutorial.
  • Cover pretzels with a towel while you bring 10 cups water to a boil in a large pot. Once boiling, add in the baking soda.
  • Once foam subsides, carefully drop one pretzel at a time into the boiling water for just 30 seconds. Remove from water and arrange on a baking sheet. 
  • Whisk together the egg yolk and one tablespoon of water then brush egg wash over top of each pretzel before sprinkling with salt if you’d like.
  • Bake pretzels for 20-25 minutes or until lightly golden brown, then leave to cool on baking sheet for 10 minutes before transferring to a wire cooling rack to cool rest of the way.

Notes

  • Xanthan gum provides a pleasant chewiness to the pretzels. If omitted or substituted, it may affect the softness and texture of the pretzels.
  • Storage: These taste best when eaten the same day, but if you want to store them, wrap them individually in plastic wrap and keep in the fridge for up to 2 days or in the freezer for 1 month.
