What You’ll Need to Make Mediterranean Quinoa Salad

Quinoa – Start with 2 cups of cooked red or white quinoa (I used white quinoa) for this recipe. To cook quinoa, simply rinse 1 cup of dry quinoa, then add to a small saucepan with 2 cups of water and a pinch of salt. Bring the quinoa to a boil, then reduce to a simmer and cover with a lid. Simmer quinoa for about 15 minutes, or until all liquid has been absorbed. Once cooked, let cool to room temperature before adding to this salad!

Chickpeas – A can of chickpeas adds some extra protein to this grain salad. However, if you don’t like chickpeas, you can leave them out. Or, feel free to swap out the chickpeas with your favorite white bean – canneloni beans or navy beans would also taste great!

Kalamata Olives – This classic mediterranean ingredient adds tons of delicious flavor to this quinoa salad! Either buy pitted kalamata olives, or slice and pit them yourself for this recipe.

Feta – Another staple ingredient in many mediterranean recipes! Feta cheese is deliciously creamy and salty, and takes this salad recipe to the next level. Though if feta’s not your thing, you can leave it out or replace if with your favorite soft white cheese.

  • This salad is great for meal prep! You can fully prep and store this salad in the fridge for up to 4 days. The flavors will only intensify as it sits.

Ingredients

  • 2 cups cooked quinoa

  • 1 (15.5 ounce) can chickpeas, drained and rinsed

  • 1/2 English cucumber, chopped

  • 1 bell pepper, chopped

  • 1/2 red onion, chopped

  • 1/2 cup kalamata olives, pitted and sliced in half

  • 1/2 cup sun-dried tomatoes, finely chopped

  • 1/2 cup fresh basil, finely chopped

  • 1/3 cup crumbled feta

  • For the lemon dressing:
  • 1/2 cup olive oil

  • 1/4 cup lemon juice

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Directions

  • Add the quinoa, chickpeas, cucumber, bell pepper, red onion, kalamata olive, sun-dried tomatoes, basil, and feta to a large bowl.
  • In a separate small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper until combined.
  • Pour the dressing over the salad and toss to combine. Enjoy immediately or store in an airtight container in the fridge for up to 4 days.

A classic French Niçoise salad, fully loaded with all things fresh and delicious! Bursting with seasonal spring veggies such as crisp green beans, baby potatoes, cherry tomatoes, and capers. This hearty Niçoise salad is then finished off with a tangy and herby dijon vinaigrette.

What You’ll Need To Make This Niçoise Salad

Dijon Mustard – This French mustard works perfectly in this French recipe! Two tablespoons of tangy, slightly spicy Dijon mustard gives our dressing loads of delicious flavor. If you don’t have Dijon mustard, you can use spicy brown mustard or 1 teaspoon of ground mustard seed in its place.

Olive Oil – Plenty, and I mean plenty of olive oil is essential to a smooth and creamy vinaigrette! I like having two different kinds of olive oil in my kitchen – one cheaper, less flavorful kind, and one higher quality kind. The higher quality olive oil is exactly what I’d reach for in this, or any, salad dressing recipe. Whereas the cheaper, less flavorful olive oil is perfect for cooking, since much of its flavor will get cooked off anyway!

Baby Potatoes – These creamy, adorable potatoes are traditional to all Niçoise salads recipes. Either red or yellow baby potatoes will work here (I used a combination of both). To prep them for this dish, give them a good scrub under cold water then slice each one in half. Once prepped, quickly boil the baby potatoes until fork tender, then coat in dressing and add to your salad!

Lettuce – Really any kind of lettuce would work in this salad! Boston or butter lettuce taste both fresh and crisp, and are the perfect base to this hearty salad. However, I’ve swapped out the lettuce for arugula, baby spinach, and romaine – all were delicious!

Eggs – Hard boiled eggs, soft boiled eggs, or anywhere in between! There are a ton of boiled egg how-tos out there on the internet, in case you need some guidance. I followed this jammy egg recipe and my boiled eggs turned out PERFECT.

Tuna – It’s not a Niçoise salad without some flaked tuna! Similar to the olive oil in this salad recipe, we want to use good quality tuna as well. Also, look for solid canned tuna, as opposed to chunk light tuna. And for an even richer, more flavorful tuna, use tuna packed in oil – it’s extra buttery and delicious!

Tips and Tricks

  • When making the Niçoise salad dressing, *slowly* pour in the olive oil, while whisking. Doing this will help to emulsify the oil into the dressing, creating a smooth and well-combined vinaigrette. And take your time here, because rushing this step could cause the dressing to separate.
  • Boil the fresh green beans for no more than a few minutes! Green beans cook quickly, and can overcook even quicker. Therefore, to ensure they maintain their crisp-ness, boil them for no more than 3 minutes, then immediately transfer to a bowl of ice water to stop the cooking!
  • Add this Niçoise salad into your weekly meal prep! To do this, simply chop and prep all salad ingredients, then whisk together the dressing. Divide and assemble your salads into four separate containers, and store the dressing on the side – then, when ready to eat, dress your salads and enjoy!

Adjust This Recipe To Your Dietary Needs

Make it Vegan: For a vegan Niçoise salad, leave out the hard boiled eggs, and replace the tofu with a cup or two of cooked lentils.

Make it Paleo: This recipe is easily made paleo by leaving out the potatoes! If you’d like, you can even use cauliflower florets in their place.

Ingredients

  • For the dressing:
  • 1/4 cup white wine vinegar

  • 2 tablespoons Dijon mustard

  • 1/2 tablespoon fresh thyme, chopped

  • 1 teaspoon honey

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 3/4 cup olive oil

  • For the salad:
  • 1 pound baby potatoes, sliced in half

  • 8 ounces green beans, trimmed

  • 1 head Boston lettuce or butter lettuce, chopped

  • 2 (5-ounce) cans tuna, drained (see Notes)

  • 4 eggs, boiled

  • 1/2 red onion, thinly sliced

  • 1/2 cup cherry tomatoes, halved

  • 5-6 radishes, ends trimmed and cut in half

  • 1/4 cup mixed olives

  • 2 tablespoons capers

Directions

  • Make the dressing my whisking together all ingredients except olive oil. Once combined, slowly pour in olive oil while whisking to emulsify oil and create a smooth dressing.
  • Bring a large pot of water to a boil, then add in the sliced potatoes along with a pinch of salt. Cook potatoes until fork tender, about 10 minutes, then drain from water. Transfer potatoes to a large bowl and toss in ¼ cup of dressing.
  • Bring another large pot of water to a boil, then add in trimmed green beans. Cook green beans until tender, about 2-3 minutes, then transfer to an ice bath to stop the cooking. Once cool, remove green beans from ice bath.
  • Assemble all salad ingredients on a large platter – cooked potatoes, green beans, lettuce, tuna, boiled eggs, red onion, tomatoes, radishes, mixed olives, and capers. Drizzle some dressing over salad and serve with extra dressing on the side.

  • Tuna: Canned tuna packed in oil is ideal here, since it’s moist and has more flavor. However, if all you have is canned tuna packed in water then that works too!

This antipasto salad comes together in just 5 minutes! Quick, easy, and exploding with flavor. Loaded with healthy ingredients, and finished off with a 3-ingredient dressing. It’s also entirely gluten-free, with a dairy-free option!

What You’ll Need To Make Antipasto Salad

Romaine Lettuce – Fresh, crisp, and extra crunchy romaine is the perfect base to this Italian salad. Romaine is hearty, yet super mild, and won’t take away from all the other flavors we have going on in this dish. However, if you don’t have romaine, you can certainly use any other kind of lettuce you’d like. Some fresh arugula would also taste great!

Olives – Feel free to use a variety of your favorite olives in this antipasto salad! I used a combo of green and black olives, which were perfectly briny and delicious. I’ve also made this salad with marinated green olives and it was nothing short of exceptional! Also, if you don’t like olives (first of all, how?!), you can definitely leave them out of this salad altogether.

Salami – I added this Applegate Genoa Salami to my salad, but any brand/type of salami will work here. Smoked salami, spicy salami, thinly sliced salami, etc. will all taste amazing. You can even swap the salami for prosciutto, if that’s more your thing!

Red Wine Vinegar – Either red wine vinegar or white wine vinegar will blend perfectly into our 3-ingredient dressing. The tangy, sour vinegar brings out the abundance of savory flavors in this salad recipe. However, if you don’t have any vinegar on-hand, a tablespoon of lemon juice makes for a great substitution!

Tips and Tricks

  • This antipasto salad is basically a charcuterie board, served over lettuce. It’s got all the charcuterie things from cured meats to marinated veggies. Therefore, throw any and all of your favorite charcuterie fixings into this simple salad!
  • Make this an Italian-style pasta salad by replacing the lettuce with your favorite cooked pasta! And for a gluten-free pasta salad, use your favorite gluten-free pasta instead.
  • Because this salad holds up so well in the fridge, it’d make a great addition to your weekly meal prep! Simply portion out this salad into four servings, then store the dressing on the side. When ready to eat, remove your pre-portioned salad from the fridge and then dress- that’s it!

Adjust This Recipe To Your Dietary Needs

Make it Vegan: For a vegan meal, leave out the pepperoni, salami, and mini mozzarella balls. You can also replace these three ingredients with your favorite vegan protein, such as chickpeas, white beans, or even lentils.

Make it Dairy-Free: Easily make this antipasto salad dairy-free by leaving out the mini mozzarella balls. I personally took this option and my salad was still insanely flavorful and delicious!

  • 1 cup mixed olives, halved

  • 4 ounces sliced pepperoni

  • 1/4 cup jarred roasted red peppers, chopped

  • For the dressing:
  • 1/4 cup olive oil

  • 1 tablespoon red wine or white wine vinegar

  • 1 teaspoon Italian seasoning

Directions

  • Add all salad ingredients to a large bowl or serving platter.
  • Make the dressing by whisking together all dressing ingredients in a small bowl, then pour over salad. Serve immediately.

A flawless vegan charcuterie board, perfect for any occasion! An assortment of fresh fruits, veggies, crackers, bread, and vegan cheeses create the perfect spread. Have fun with this vegan charcuterie board, feel free to switch things up and make it your own!

What You’ll Need

  • Hummus – Either homemade or store bought hummus will work on your charcuterie board! As much as I love a homemade hummus, I usually prefer to save myself a bit of time by buying pre-packaged hummus from the store. Whole Foods make a delicious hummus, as does Trader Joe’s and Hope Hummus!

  • Crackers – Any and all crackers are welcome on this snack board! I typically use gluten-free crackers to keep my spread gluten-free friendly. Though feel free to use whatever crackers you like best.

  • Nuts – Nuts are always an exciting, crunchy addition! You can get fancy here and purchase marcona almonds or flavored nuts for your board. Though I kept things simple with raw walnuts and pecans. I love using nuts on any charcuterie board, as they’re the perfect item to fill any empty space. Nuts are especially amazing on this vegan charcuterie board thanks to their high protein content and nutritional value, keeping things hearty yet healthy!

  • Vegan Cheese – This is a totally optional addition, but I have a few vegan cheese brands I love featuring on my charcuterie board! I’m pretty picky when it comes to non-dairy cheese though, and avoid any that taste too fake and/or are overly processed. Spero Foods make some of my all-time favorite vegan soft cheeses. Their herb cream cheese and goat cheese are perfect for this recipe! They’re all deliciously tangy, smooth, and incredible on crackers or toast. Though my runner-ups for this charcuterie board are Kite Hill vegan cheeses, and a handful of Myoko vegan cheese flavors.

How to Make a Vegan Charcuterie Board

  1. Begin every charcuterie board by prepping the ingredients you’ll be placing on your board. This includes washing fresh fruit, cutting bread, slicing cheese, etc. Once prepped, you’ll be able to see every element of your board and decide in which order you’d like to place them.


  2. Pick a large board or surface to lay everything on, then place small bowls around the board. These bowls don’t have to be in any particular pattern or order, so simply evenly space them around your board.


  3. Fill those small bowl with things like hummus, soft cheese, dips, olives, or really anything that would make a mess if placed directly on your board/surface.


  4. Now that your bowls are all filled, go in with remaining larger items such as crackers, sliced bread, and fruit – working with one ingredient at a time.


  5. Once the vegan charcuterie board looks mostly complete, then fill in any gaps with your small items (in this case, I used nuts). Continue doing this until your board is fully loaded and ready to be served!

Optional Add-Ons

There really is no wrong way to jazz up a charcuterie board, so any of the following would make delicious additions to your vegan board:

  • Pickles
  • Strawberries
  • Chocolate Squares
  • Dried Fruit
  • Jelly/Jam
  • Mustard
  • Sweet Peppers
  • Cherry Tomatoes
  • Apple Slices
  • Carrots

  • cucumber, sliced

  • baguette, sliced

  • grapes

  • mandarin oranges, partially peeled

  • nuts (almonds, cashews, pecans, or walnuts)

  • radishes, sliced

  • vegan cheese, see Notes

Directions

  • Prep all ingredients – wash fruits and veggies, slice or chop items, etc.
  • Lay down the surface you’ll be arranging your items on, then start by placing small bowls evenly throughout the surface. You’ll need about 3-4 bowls for your olives, hummus, and vegan cheese.
  • Fill the bowls, then begin arranging items on your surface, leaving smaller items like nuts for the end. Finish by filling any gaps on your charcuterie boards with nuts or any other ingredients that may fit.

This vegan and gluten-free Spaghetti Squash Alla Puttanesca recipe is a lighter pasta dish that calls for mostly basic pantry ingredients. We can all use a few more of those recipes, right? Keep in mind that this dish relies on some very briny ingredients for flavor, so if you aren’t a fan of olives and capers, this one is probably not for you. (more pasta recipes here, though).

WHAT YOU NEED TO MAKE SPAGHETTI SQUASH ALLA PUTTANESCA

Spaghetti Squash – This is a fantastic substitute for pasta. It’s easy to cook, lower in carbs and calories, and high in fiber and other important nutrients.

Tomatoes –  Diced tomatoes in puree is best since they have a lot more flavor!

Capers – These green, pea-sized balls are actually pickled flower buds and they add a floral, tangy, and salty flavor to dishes.

Olives – Specifically Kalamata olives because it also adds a strong, tangy flavor to the dish.

Fresh Parsley or Basil – This comes down to personal preference. Pick whichever herb you like best, and add it to your recipe.

ADJUST THIS RECIPE TO YOUR DIET

  • Add vegan protein: add in some sautéed mushrooms, pan-fried tofu, or white beans.

  • Add meat: mix a pound of cooked ground turkey into the sauce before filling the squash.

  • Sprinkle on some cheese: If not dairy-free, add in any cheese you’d like to this recipe.

Spaghetti Squash Alla Puttanesca is a rich, robust vegan meal that is low in carbs and gluten-free!  Made with lots of garlic, tomatoes, olives, and capers, this is a simple and easy dinner that is healthy and delicious!

Ingredients

  • 1 spaghetti squash

  • 2 tablespoons avocado oil

  • Salt, to taste

  • Black pepper, to taste

  • For the sauce:
  • ¼ cup olive oil

  • 4 garlic cloves, minced

  • ½ teaspoon red pepper flakes

  • ½ cup kalamata olives, pitted and halved

  • 2 tablespoons capers

  • 1 teaspoon caper brine*

  • 1 (28-ounce) can diced tomatoes (see notes)

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Fresh chopped parsley, for serving

Directions

  • Preheat oven to 400° Fahrenheit.
  • Slice spaghetti squash in half then scoop the seeds out. Drizzle the inside flesh with avocado oil then sprinkle with salt and pepper.
  • Transfer spaghetti squash to a baking sheet with the flesh-side facing down and roast for 30-40 minutes or until fork tender. 
  • While the squash cooks, heat olive oil in a large skillet over medium heat. Then add in the garlic and red pepper flakes, cook for about 1 minute or until fragrant.
  • Add in the olives, capers, and caper brine then stir and cook for about 2-3 minutes.
  • Pour in the can diced tomatoes, salt, and black pepper before leaving the sauce to simmer for 15 minutes. Taste and adjust any seasoning as desired.
  • Once squash is done, remove from the oven and let cool slightly before using a fork to scrape and fluff the inside strands. Fill each squash with puttanesca sauce and top with fresh chopped parsley.
