Melt together the chocolate chips, peanut butter, and coconut oil to a large bowl in either the microwave or over a double boiler until completely smooth.
Add in the fresh blueberries and stir to coat in the chocolate mixture.
Once all blueberries are evenly coated in chocolate, sprinkle the powdered sugar on top of the blueberries and using a clean spoon toss the blueberries in the powdered sugar until they’re evenly covered. Or, if your bowl has a lid, secure the lid and gently shake the container (be very careful not to shake too hard or the blueberries will get crushed) until the blueberries are evenly covered in powdered sugar.
Transfer the coated blueberries to a parchment lined baking sheet, spread them into an even layer, then transfer to the fridge to harden for about 1 hour. Once the chocolate around the blueberries have hardened, either serve/enjoy or store them in an airtight container in the fridge for up to 1 week!
