Equipment

  • 1 9x9-inch baking dish or 9-inch pie dish
  • 1 medium bowl

Ingredients

For the pumpkin filling:

  • 15 ounces pumpkin puree 1 can
  • 2 eggs
  • ½ cup maple syrup
  • ½ cup almond milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice

For the crisp:

  • 1 cup rolled oats certified gluten-free if needed
  • ½ cup almond flour
  • ½ cup coconut sugar or brown sugar
  • 1 stick (1/2 cup) butter cut into 1-inch cubes, or ⅓ cup solid coconut oil
  • 1 teaspoon cinnamon

Method

  • Preheat the oven to 350°F and lightly grease a 9x9-inch baking dish.
  • Whisk the eggs directly in the baking dish, then add the pumpkin puree, maple syrup, almond milk, vanilla extract, and pumpkin pie spice. Whisk until completely smooth and spread into an even layer.
  • In a medium bowl, mix together the rolled oats, almond flour, coconut sugar, butter (or coconut oil), and cinnamon with a fork or your fingers until crumbly.
  • Sprinkle the crisp topping evenly over the pumpkin filling.
  • Bake for 30–35 minutes, until the topping is golden and the filling is set with a slight jiggle in the center.
  • Let cool for at least 15 minutes before serving. Enjoy warm with ice cream or whipped cream!

Notes

  • Less mess: Mixing the filling right in the baking dish means fewer dishes to wash! Just be sure to whisk the eggs well first so there are no streaks.
  • Gluten-free: Use certified gluten-free rolled oats.
  • Refined sugar-free: Use coconut sugar (not brown sugar) in the crumble.
  • Dairy-free: Use solid coconut oil or a dairy-free butter in the crumble.
  • Make ahead: Bake up to 1 day ahead, cool completely, cover, and refrigerate. Reheat in a 300°F oven for 10–15 minutes to re-crisp the topping.
  • Storage: Store covered in the fridge for up to 4 days. Enjoy cold or reheat in the oven or microwave.
