Ingredients

  • 1 cup mashed sweet potato
  • 1 cup almond butter or any nut/seed butter
  • ½ cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract optional but recommended
  • ½ cup unsweetened cocoa powder
  • ½ cup chocolate chips optional but recommended

Instructions

  • Preheat oven to 350°F and line a 9x9-inch baking pan with parchment paper.
  • Whisk together the mashed sweet potato, almond butter, maple syrup, egg, and vanilla extract until smooth.
  • Add the cocoa powder and stir until fully combined. Fold in chocolate chips if using.
  • Transfer to the prepared pan and spread evenly.
  • Bake 20–25 minutes until the edges are set and a toothpick comes out with just a few moist crumbs.
  • Cool completely before slicing - this is essential for clean, fudgy brownies!
