What You Need To Make Salted Caramel Energy Bites

Medjool Dates – These are what I like to call nature’s candy! Medjool dates are irresistibly sweet and caramel-y. Oh, and the best thing about dates? They’re actually very good for you! They’re loaded with nutrients, high in fiber (you know what that means *wink wink*), and are jam-packed with antioxidants. So next time you’re at the store, do yourself a favor and pick up a pack of these disease-fighting sweets. I especially love purchasing a big ole’ pack of organic medjool dates from Costco and using them in these salted caramel energy bites. However, if you don’t have a Costco membership, Trader Joe’s has some fairly-priced ones as well!

Almond or Peanut Butter – Use whichever nut butter you prefer! Peanut butter will actually make these delicious little treats taste like candy. Though almond butter is what I used in this specific recipe, and they too were out-of-this-world good! Also, if there’s another type of nut butter out there that you love – cashew, pecan, or even granola butter – feel free to use that instead.

Adjust This Recipe To Your Diet

Make it Nut-Free: Use sunflower seed butter in place of the almond or peanut butter in this recipe. I have tested this nut-free variation of salted caramel energy bites and therefore can speak to their deliciousness!

Pack in More Nutrients: If you’re looking to further up the nutritional value of this already super healthy snack, you can add a few tablespoons of chia seeds and/or flaxseed meal in with the other two ingredients.

Tips For Making Salted Caramel Energy Bites

  • Don’t forget to soak your dates! Soaked dates will blend like a freaking dream. However, non-soaked dates will most likely get stuck and create a chunky mixture.
  • Lightly grease your hands with oil before handing these salted caramel energy bites! The mixture is pretty sticky, even after some time in the freezer. Therefore, make your life easier and rub about a teaspoon of any kind of oil you’d like between your palms before handling.
  • In the hot summer months, store these babies in the freezer. The natural oils in the nut butter make these susceptible to melting in warm weather. Therefore, store your bites in the freezer for safe keeping!

These salted caramel energy bites melt in your mouth! With just two ingredients you’ll have healthy, yet decadent vegan treats.

Ingredients

  • 1 cup medjool dates, pitted

  • 1/4 cup almond butter or peanut butter

  • pinch of salt

  • For rolling:
  • shredded unsweetened coconut

  • unsweetened cocoa powder

  • sprinkles

Directions

  • Place pitted dates in a bowl with water and soak for at least 3 hours and up to 8 hours.
  • Drain dates from water then place in a high-speed blender or food processor along with the almond butter and salt.
  • Blend until mixture is completely smooth, then scoop out one to two tablespoon sized scoops onto a parchment-lined plate. Pop in the freezer for 10-15 minutes or until slightly firm.
  • Remove bites from the freezer and roll into balls between the palms of your hands. Roll bites in any toppings you’d like or enjoy as-is!
