Healthy Pumpkin Pie Bars

These healthy pumpkin pie bars have a buttery graham cracker crust and a silky, perfectly spiced pumpkin filling that tastes just like classic pumpkin pie. Blended cottage cheese (don’t knock it ’til ya try it!) gives them a rich, creamy texture and about 10 grams of protein per bar, and they’re naturally sweetened with maple syrup. They’re easy to make gluten-free and even easier to slice and serve, which makes…

All the creamy, cozy, perfectly spiced goodness of pumpkin pie, in an easy, sliceable bar! These healthy pumpkin pie bars have a buttery graham cracker crust and a silky-smooth pumpkin filling, and they’re secretly packed with protein thanks to one surprise ingredient: cottage cheese. Blended completely smooth, it disappears into the filling and gives these bars the richest, creamiest pumpkin pie texture. Nobody will ever guess it’s in there!

If you’ve ever been intimidated by making pumpkin pie from scratch, these bars are for you. There’s no pie crust to roll out, no crimping edges, and no mixer. You just press the crust into a pan, blend the filling, pour, and bake. They’re naturally sweetened with maple syrup, easy to make gluten-free, and have about 10 grams of protein per bar. That’s more than double most pumpkin bars! They’re the perfect make-ahead dessert for Thanksgiving, Friendsgiving, or any cozy fall night.

Why You’ll Love These Healthy Pumpkin Pie Bars

  • They taste exactly like pumpkin pie, only easier. You get a buttery crust and a creamy, custardy pumpkin filling with warm pumpkin pie spice, with zero pie-making stress. Press the crust into an 8×8-inch pan, blend the filling in a blender, pour, bake, and chill. That’s it!
  • They’re higher in protein than any pumpkin bar you’ve tried. Most healthy pumpkin bars have 4–7 grams of protein per bar. Thanks to cottage cheese and eggs, these pumpkin pie bars have about 10 grams! They’re a dessert that actually keeps you satisfied, and honestly, I’m not above eating one for breakfast.
  • They’re the perfect make-ahead holiday dessert. These bars need to chill for at least 3 hours, and they’re even better made the night before. That makes them ideal for Thanksgiving: bake them a day ahead, slice, and you’ve got one less thing to worry about on the big day. Plus, bars are SO much easier to serve to a crowd than pie!

What Makes These Pumpkin Pie Bars Healthy?

Traditional pumpkin pie is made with sweetened condensed milk or heavy cream, refined white sugar, and a white-flour crust loaded with shortening. These healthy pumpkin pie bars give that classic dessert a wholesome makeover without losing any of the flavor:

  • Cottage cheese instead of condensed milk or heavy cream: This is the secret ingredient! Blended until silky smooth, cottage cheese gives the filling a rich, creamy, cheesecake-like texture while adding a serious protein boost. It has far less sugar and saturated fat than condensed milk or heavy cream.
  • Real pumpkin puree: A full 15-ounce can of 100% pure pumpkin adds fiber, vitamin A, and natural sweetness to every bite.
  • Maple syrup instead of refined sugar: The filling is sweetened with just ½ cup of pure maple syrup, with no white sugar or brown sugar. Combined with the pumpkin pie spice, it’s all the sweetness these bars need.
  • Eggs for structure and protein: Four eggs set the filling into that classic custardy pumpkin pie texture while adding even more protein.
  • A light, simple crust: Only 1 cup of crumbs and 3 tablespoons of butter. That’s much less than a traditional pie crust, and it’s easy to make gluten-free!

Ingredient Swaps & Recipe Variations

Ingredient Swaps

  • Graham crackers: Regular graham crackers contain wheat, so to keep these healthy pumpkin pie bars gluten-free, use gluten-free graham crackers or crunchy gluten-free cookies (Simple Mills Sweet Thins are my favorite). Gingersnaps make an amazing spiced crust too. Just use gluten-free gingersnaps if needed!
  • Butter: Melted coconut oil works as a 1:1 swap in the crust.
  • Cottage cheese: Full-fat (4%) cottage cheese gives the creamiest, richest filling, and Daisy is my go-to. Low-fat cottage cheese works too, but the filling will be slightly less rich. Want even more protein? Plain Greek yogurt can replace up to half of the cottage cheese.
  • Maple syrup: Honey works as a 1:1 swap. For lower sugar, use a sugar-free maple syrup or monk fruit syrup.
  • Pumpkin puree: Make sure you use 100% pure pumpkin puree, NOT pumpkin pie filling, which already contains sugar and spices. Homemade pumpkin puree works great (about 1¾ cups), as long as it’s very smooth.
  • Pumpkin pie spice: Make your own with 1 teaspoon cinnamon, ½ teaspoon ginger, ¼ teaspoon nutmeg, and a pinch each of cloves and allspice.

Recipe Variations

  • 🍪 Gingersnap Crust: Swap the graham crackers for crushed gingersnaps for an extra spicy, cozy crust.
  • 🍫 Chocolate Crust: Use chocolate graham crackers or chocolate cookie crumbs for a pumpkin-chocolate combo.
  • 🥧 No-Crust Pumpkin Pie Bars: Skip the crust entirely, generously grease the pan, and pour the filling straight in for a lighter, crustless version.
  • 🍂 Pecan Streusel Topping: Mix ½ cup chopped pecans, 2 tablespoons coconut sugar, and 1 tablespoon melted butter, then sprinkle over the filling before baking.
  • 🍁 Maple Whipped Cream: Top each bar with whipped cream sweetened with a drizzle of maple syrup and a sprinkle of cinnamon before serving.

Healthy Pumpkin Pie Bars

Prep Time10 minutes
Cook Time35 minutes
Total Time4 hours 45 minutes
Servings9 servings

Equipment

  • 1 8×8-inch baking pan
  • 1 food processor or high speed blender
  • 1 medium bowl

Ingredients

For the crust:

  • 1 cup graham cracker or cookie crumbs gluten-free if needed
  • 3 tablespoons melted butter or coconut oil

For the pumpkin filling:

  • 2 cups cottage cheese
  • 1 (15-ounce) can pumpkin puree
  • 4 eggs
  • ½ cup maple syrup
  • 2 teaspoons pumpkin pie spice

Method

  • Preheat the oven to 325°F and line an 8×8-inch baking pan with parchment paper, then lightly grease the inside.
  • Make the crust by mixing the graham cracker or cookie crumbs with the melted butter or coconut oil in a bowl, then press the mixture into the bottom of the prepared pan. Bake the crust for 10 minutes.
  • While the crust bakes, make the filling by adding all filling ingredients to a blender and blending until smooth. Pour the filling over the crust, then bake for 25–30 minutes, or until the bars are just set in the middle. (See Notes below on how to bake in a water bath to avoid any cracks.)
  • Remove the bars from the oven and let them cool at room temperature for 1 hour, then transfer them to the fridge to chill for at least 3 hours (or overnight).
  • Once the bars have chilled, remove them from the pan and cut into squares. Enjoy right away, or store in an airtight container in the fridge for up to 5 days!
