I love a no-bake sweet treat this time of year! Wether it’s my healthy no-bake cookie dough bars, strawberry peanut butter cups, or healthy cookie dough frozen yogurt bites – I pretty much refuse to turn my oven on this time of year. Muddy buddies have always been a favorite for me, especially in the warmer months, but these blueberry muddy buddies take things to the next level. Fresh blueberries are coated in two of my favorite things – chocolate and peanut butter – then tossed in powdered sugar for an irresistible and totally addictive no bake sweet treat!

Sam’s Recipe Tips

  • Use fresh, firm blueberries: Soft or overripe berries may become mushy when coated.
  • Ensure the chocolate mixture is smooth: This helps in evenly coating the blueberries.
  • Be gentle when mixing: To prevent crushing the blueberries, stir gently or shake the container softly.
  • Refrigerate promptly: This helps the chocolate set properly and keeps the blueberries fresh!

Equipment

  • 1 large bowl

Ingredients

  • 3 tablespoons chocolate chips I used extra dark chocolate chips
  • 2 tablespoons creamy unsweetened peanut butter or any nut/seed butter
  • 1 tablespoon coconut oil or butter
  • 2 cups fresh blueberries
  • 3/4 cup powdered sugar

Instructions

  • Melt together the chocolate chips, peanut butter, and coconut oil to a large bowl in either the microwave or over a double boiler until completely smooth.
  • Add in the fresh blueberries and stir to coat in the chocolate mixture.
  • Once all blueberries are evenly coated in chocolate, sprinkle the powdered sugar on top of the blueberries and using a clean spoon toss the blueberries in the powdered sugar until they’re evenly covered. Or, if your bowl has a lid, secure the lid and gently shake the container (be very careful not to shake too hard or the blueberries will get crushed) until the blueberries are evenly covered in powdered sugar.
  • Transfer the coated blueberries to a parchment lined baking sheet, spread them into an even layer, then transfer to the fridge to harden for about 1 hour. Once the chocolate around the blueberries have hardened, either serve/enjoy or store them in an airtight container in the fridge for up to 1 week!
