I’ve been on a mission lately to switch up my breakfast recipes! I love a protein smoothie, and my 3 ingredient protein pancakes, but what I’ve really been craving is a bagel. But if you’re gluten-free like me, then you know how hard it can be to find a good gluten-free bagel. They’re all either too dense, hard, or just totally wrong and taste nothing like a bagel. But not these gluten-free bagel bites! They’re nice and toasted on the outside, but perfectly soft and fluffy on the inside. I love topping mine with a little everything bagel seasoning for extra flavor, but you can add whatever toppings or mix-ins you’d like! These 3 ingredient bagel bites are also one of the easiest gluten-free recipes you’ll ever make. Thank me later!

Why You’ll Love This Recipe

  • Super Simple & Quick – Made with just three ingredients, these bagel bites are ready in under 30 minutes.
  • Gluten-Free & Healthier – A great alternative to store-bought bagel bites with no preservatives or additives.
  • Customizable & Versatile – Top with everything bagel seasoning, cheese, or even cinnamon sugar for a sweet twist.

What You’ll Need to Make Gluten-Free Bagel Bites

Gluten-Free All-Purpose Flour – Provides the perfect structure and texture while keeping this recipe gluten-free. I use and love Bob’s Red Mill Gluten-Free 1 to 1 Baking Flour in many of my gluten-free recipes. Though for extra fluffy bagel bites, I recommend using King Arthur’s Gluten-Free Bread Flour instead.

Baking Powder – Helps the bagel bites rise and stay fluffy inside.

Plain Greek Yogurt – Adds moisture, binds the dough, and gives the bagels a slightly tangy flavor, similar to traditional bagels.

How to Make Gluten-Free Bagel Bites

  1. Preheat & Prepare – Set the oven or air fryer to 350°F and line a baking sheet with parchment paper.
  2. Mix the Dough – In a bowl, combine the flour and baking powder. Stir in the Greek yogurt until a dough forms. If the mixture is too dry, add a little more yogurt.
  3. Shape the Bagel Bites – Roll about 2 tablespoons of dough into small balls and place them on the baking sheet.
  4. Add Toppings – Brush with egg wash (optional) and sprinkle with everything bagel seasoning.
  5. Bake or Air Fry – Bake for 15-20 minutes (or air fry for 12-15 minutes) until golden brown.
  6. Serve & Enjoy – Let cool slightly and enjoy warm with butter or cream cheese.

Equipment

  • 1 large bowl

Ingredients

  • 1 cup gluten-free all purpose flour
  • 1 teaspoon baking powder
  • 1 cup plain Greek yogurt

For topping:

  • 1 egg whisked
  • 2 tablespoons everything bagel seasoning

Instructions

  • Preheat oven to 350° Fahrenheit and line a baking sheet with parchment paper. Or, preheat your air fryer to 350° Fahrenheit.
  • Mix together the gluten-free all purpose flour and baking powder in a large bowl. Then, add in the plain Greek yogurt and mix until a dough comes together (you may need to use your hands to help bring the dough together). If the dough seems dry and won’t come together in a ball, try adding an additional 1-3 tablespoons of Greek yogurt to the dough.
  • Scoop about 2 tablespoons of dough and roll it between the palms of your hands to form a ball. Place each ball on your prepared baking sheet or inside the basket of your preheated air fryer. Lightly brush the top of each bagel bite with the egg wash, then sprinkle with everything bagel seasoning.
  • Bake the gluten-free bagel bites for 15-20minutes, or until lightly golden. Or, if you’re using an air fryer, air fry the bagel bites at 350° Fahrenheit for 12-15 minutes. Remove the bites from the oven or air fryer and let cool slightly before serving warm with butter and cream cheese.

I LOVE a single serve dessert! My go-to is usually either my single serve gluten-free cinnamon roll, or if I need some extra protein I’ll quickly throw together a single serve protein cookie. But lately, I’ve been alllll about this 3-ingredient peanut butter mug cake. I love that I can take it straight out of the microwave and onto the couch with me, and enjoy it warm (!!!) while I binge whatever show I’m watching that week. I typically enjoy it all on its own, but if I’m feeling crazy I’ll add a scoop of vanilla ice cream, a drizzle of chocolate, or even a handful of sprinkles! Please, have fun with this recipe, and most importantly – ENJOY!

Why You’ll Love This Recipe

  • Fast and Easy: Ready in under 5 minutes, this mug cake is perfect for a quick snack or dessert.
  • Simple Ingredients: Only 3 pantry staples are needed, making it budget-friendly and accessible.
  • Customizable: Add mix-ins or toppings to make it your own while still keeping it simple.

What You’ll Need to Make Peanut Butter Mug Cake

Egg: The egg acts as a binder, giving the mug cake its structure and fluffy texture. I wouldn’t recommend trying to replace the egg with something else, since it’s vital to holding this mug cake together.

Peanut Butter: Adds richness, a nutty flavor, and protein to the cake. Use creamy or natural peanut butter for best results. However, if you can’t have peanut butter use any nut, seed, or granola butter in its place!

Sugar: Sweetens the mug cake. Adjust the quantity based on your taste preference or use alternatives like coconut sugar for a refined sugar-free option!

Here’s a link to the microwave-safe mug I used – on Amazon!

How to Make Peanut Butter Mug Cake

  1. Start by cracking an egg into a microwave-safe mug.
  2. Add the peanut butter and sugar, then mix well until smooth and lump-free.
  3. Microwave for 1 minute. Check the texture; if it’s undercooked, microwave for an additional 10 seconds.
  4. Allow to cool slightly, then enjoy it straight from the mug!

Topping/Mix-In Options

  • Chocolate Chips: Sprinkle a few on top before microwaving for a melty chocolate finish.
  • Banana Slices: Add a natural sweetness and pair perfectly with peanut butter.
  • Crushed Nuts: For extra crunch, sprinkle chopped peanuts or almonds on top.
  • Drizzles: Drizzle with honey, maple syrup, or melted chocolate after cooking.

Sam’s Recipe Tips

  • Microwave Timing: All microwaves vary in power. Start with 1 minute, then check and add time in 10-second increments if needed.
  • Texture: For a gooier center, slightly undercook the cake by a few seconds.
  • Peanut Butter: Natural peanut butter may result in a slightly denser texture but works perfectly. Stir well before using to incorporate the oils.

  • Made with just 3 simple ingredients, this mousse is easy to whip up in minutes and perfect for any occasion.
  • Packed with protein from silken tofu and naturally sweetened with maple syrup, this dessert is both healthy and indulgent.
  • Gluten-free and refined sugar-free, making it suitable for various dietary needs.

What You’ll Need to Make Tofu Chocolate Mousse

Silken Tofu: The base of the mousse, silken tofu creates an irresistibly smooth and creamy texture while adding a healthy dose of plant-based protein. Remove your tofu from the fridge at least 30 minutes before making this recipe, since you’ll need it at room temperature before combining it with the other ingredients!

Chocolate Chips: Melted dark chocolate chips are the star of this recipe, adding a rich and luxurious chocolate flavor. Opt for dark chocolate to keep the mousse vegan and naturally lower in sugar.

Maple Syrup: A natural sweetener that balances the dark chocolate’s richness while adding a hint of caramel-like sweetness.

How to Make Tofu Chocolate Mousse

  1. Add the melted chocolate, silken tofu, and maple syrup to a blender or food processor.
  2. Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed.
  3. Divide the mousse into four small bowls or ramekins, cover with plastic wrap, and refrigerate for at least 1 hour, or until firm.
  4. Serve chilled with your favorite toppings, such as fresh berries, coconut whipped cream, or a sprinkle of cocoa powder.

Switch Up the Flavors

  • Add a teaspoon of vanilla extract for extra depth of flavor.
  • Mix in a pinch of sea salt to enhance the chocolate notes.
  • Sprinkle crushed nuts or shredded coconut on top for added texture.
  • Stir in a touch of espresso powder to intensify the chocolate flavor.

Frequently Asked Questions

Can you taste the tofu in this chocolate mousse?

Not at all! The chocolate and maple syrup completely mask the tofu flavor, leaving you with a rich and creamy mousse.

Can I use firm tofu instead of silken tofu?

It’s best to use silken tofu for the smoothest texture. Firm tofu may result in a grainy mousse.

Can I substitute the melted chocolate for cocoa powder?

You can, but the mousse may lack the richness that melted chocolate provides. If using cocoa powder, add extra maple syrup or a touch of coconut oil for creaminess.

Storage Instructions

  • Refrigerator: Store the mousse in airtight containers in the fridge for up to 5 days.
  • Freezer: Freeze the mousse in individual portions for up to 2 months. Let it thaw in the fridge overnight before serving, or enjoy it as a frozen treat straight from the freezer.

Prep Time: 5 minutes
Chill Time: 1 hour
Total Time: 1 hour 5 minutes
Servings: 4 servings

Equipment

  • 1 food processor or high speed blender
  • 4 small bowls

Ingredients

  • 1/2 cup chocolate chips melted
  • 1 (12-ounce) package silken tofu drained and patted dry (at room temperature!)
  • 2 tablespoons maple syrup

Instructions

  • Add all ingredient to a blender or food processor and blend until completely smooth.
  • Pour the chocolate mousse into four small bowls, then cover each bowl with plastic wrap and transfer the mousse to the fridge.
  • Leave the chocolate mousse to firm up in the fridge for at least 1 hour, and up to 8 hours before serving.

Notes

Please make sure your silken tofu is at room temperature before combining it with the other ingredients. If the tofu is cold, it will cause the melted chocolate to harden and create a grainy texture in your chocolate mousse. Therefore, to avoid that, remove the tofu from the fridge at least 30 minutes before making this recipe!
